It was the weekend and hubby loves and looks forward to having a heavy or special breakfast, Luckily he bought some country bread the day before, and I was wondering what would go well with country bread? well, something simple and goes well would be an omelet sandwich!
Here’s a quick recipe for a country bread omelet sandwich!
Country Bread Omelette sandwich

A yummy morning breakfast!
Ingredients
- 2-3 eggs beaten
- 1 tsp dried parsley
- 1/2 pepper
- 1/2 salt
- 1 tbsp parmesan cheese
- diced white onions
- chopped spinach
- 1 tbsp butter
- lettuce
Directions
Heat a skillet, low flame
crack the eggs and beat well, till the yolk takes over, add the pepper, parsley, and salt and beat again.
Add in the butter onto the skillet, once the butter melts add the diced onions and stir well, sprinkle a pinch of salt and pepper to this, as this good help cook the onions well and get rid of the raw smell.
once the onions are transparent, add in the spinach and stir well, till the spinach gets lightly cooked (remember not to over cook the spinach)
now add in the eggs, and leave for 20 seconds, once the eggs start to set use your spatula and push the eggs from the rim to the center till the eggs distribute well.
once the eggs are set, flip the omelet till cooked and fried well on both sides.
Keep the omelet aside till we set the sandwich.
On the same skillet add the country bread slices (make sure you add butter on both the sides of the bread) and toast well both sides (just the way you do with your grilled cheese sandwich)
take the bread off when toasted and start setting the sandwich
Setting the sandwich
- For setting the sandwich spread light mayonnaise on both the inner sides of the bread
- Sprinkle a pinch of pepper (optional)
- Add lettuce
- Add the omelet folded
- cover with the next bread slice.
Repeat this process if you’re making more than one sandwich.

- 3 tea bags
- 1 cinnamon stick
- 1 tsp ginger
- 3 -4 cardamom pods
- 1/4 cup brown sugar (packed)
- 1 cup low-fat milk
